Our Cooking

Our cooking is guided by flavour, seasonality and care.

Everything we make starts from scratch, using good ingredients and techniques that respect them. We cook the way we believe food should be cooked: properly, generously and without shortcuts.

Our menus are shaped by what is available locally and by the seasons. That means they change regularly, reflecting what our suppliers are producing and what we are growing ourselves.

Cooking for real life

We cook for real situations. Busy households. Shared celebrations. Workplaces. Community gatherings.

Our meals are designed to be satisfying and complete, with portion sizes based on restaurant meals rather than standard ready meals. We want food at home to feel like something you look forward to, not a compromise.

Dietary requirements are handled with care and clarity. Ingredients are listed clearly, and most dishes can be adapted where possible.

Rooted in place

Our cooking reflects where we are. It is influenced by the land, the growers, the seasons and the people we cook for.

Whether a dish is inspired by local traditions or global flavours, it is always grounded in ingredients that make sense here and now.

Local Food

We buy ingredients with intention. Making choices that supports our local Moray Food system. We buy nearly 80% of all our fresh ingredients from within 60 miles of IV36. This means you are supporting local everytime you eat with us.

Proper Ingredients

We obsess over quality, delicious and seasonal ingredients. When we say proper we mean provenance too; Pasture for Life, Grass-Fed Meat, Organic Ingredients that are nutritious and quality. Everything made from scratch in our kitchen too.

Better Biodiversity

We've worked in the food system for over 30 years, we are passionate about quality food but food systems aren't only about the food. We make sure that our kitchen garden is also supporting the biodiverse life our food system relies on too.
